#1 Chicken Detox Soup

INGREDIENTS

1 1/2 lb Pounds boneless skinless chicken breast
6 scoops
Progressive® Organic Bone BrothTM
1 Large onion, peeled and chopped
3 cups Broccoli florets
2 1/2 cups Sliced carrots
2 cups Chopped celery
1/4 cup Chopped parsley
3 tbsp Fresh ginger, shredded or grated
4 cloves Garlic minced
2 tbsp
Olive oil
1 tbsp
Apple cider vinegar
1/4 - 1/2 tsp
Crushed red pepper
1/4 tsp
Ground turmeric

Salt and pepper

 

 

#2 Classic chicken noodle soup

 Preparation time: 40min

Portions: 12

INGREDIENTS

2 tbsp
Extra-virgin olive oil
1 Medium onion, chopped
3 cloves Garlic minced
2 Medium carrots, cut diagonally into 1/2-inch-thick slices
2 ribs Celery, halved lengthwise, and cut into 1/2-inch-thick slices
4 sprigs
Fresh thyme
1 Leaf Bay
6 scoops Progressive® Organic Bone BrothTM
8 oz Dried wide egg noodles
1 ½ cups Shredded cooked chicken
Sel kasher et poivre noir fraîchement moulu
1 handful
Fresh flat-leaf parsley, finely chopped

 

DIRECTIONS

  1. Mix 6 scoops Progressive® Organic Bone BrothTM with 3 litres of water.
  2. Place a soup pot over medium heat and coat with the oil. Add the onion, garlic, carrots, celery, thyme and bay leaf. Cook and stir for about 6 minutes, until the vegetables are softened but not browned.
  3. Pour in the Progressive® Organic Bone BrothTM and bring the liquid to a boil.
  4. Add the noodles and simmer for 5 minutes until tender.
  5. Fold in the chicken and continue to simmer for another couple of minutes to heat through; season with salt and pepper and remove bay leaf.
  6. Sprinkle with chopped parsley before serving.

#3 Lemon Chicken Quinoa soup

INGREDIENTS

1 tbsp
Olive oil
1/2 cup
Onion, chopped
3 cloves Garlic, minced
2 cups
Carrots, chopped
2 cups Celery, chopped
1/2
Dried thyme
2 leaves Bay
6 scoops Progressive® Organic Bone BrothTM
1 pound
Boneless skinless chicken breast (raw or cooked), cut into cubes
1/2 cup Quinoa, rinsed
Salt and Pepper
1
Juice of 1 lemon
4 cups Kale, haché

 

  1. Mix 6 scoops Progressive® Organic Bone BrothTM with 3 litres of water.
  2. In a large stock pot, heat the olive oil. Cook the carrots, celery, onion and garlic until soft, about 7 minutes.
  3. Add the Progressive® Organic Bone BrothTM, chicken, quinoa, lemon juice, bay leaves, thyme, salt and pepper. Bring to a boil, then reduce heat, cover and simmer for about 20 minutes.
  4. Stir in the kale until wilted (this only takes a minute). Season with more salt and pepper to taste. Remove bay leaves. Serve hot.
