Decadent Halloween Cupcakes

Want to eat something delicious on Halloween (or anytime!) without straying too far off your diet? 👻 We've got what you need! 😃 Pumpkin cream cheese cupcakes! 🎃
Preparation time: 20 min
Cooking time: 40-45 min.
|1/3 Cup||Pumpkin Puree|
|1 Cup||Coconut Flour|
|2 Tbsp||Pumpkin Pie Spice|
|1 Tsp||Vanilla extract|
|1 Scoop||Quattro Vanilla Protein powder|
|1 Tsp||Xanthan Gum|
|1/4 Cup||Stevia or sweetener of your choice|
|1/2 Cup||Low-fat cream cheese|
|2 Tbsp.||Almond milk|
|3 Tbsp.||Stevia or sweetener of your choice|
- Blend with mixer all ingredients for cupcake base and scoop into cupcake liners.
- Bake at 350F for 45-50 mins or until golden brown. Cupcakes will be a little soft on the inside just like a pumpkin pie.
- In a separate dish blend all frosting ingredients together and place in fridge until cupcakes are done and cooled.
- Put frosting into piping bag and decorate 🙂 Enjoy!
